Grilled desserts are the perfect way to celebrate summer! For these grilled peaches and pound cake skewers, fresh peaches and thick slices of frozen pound cake are threaded onto skewers, brushed with a honey butter full of cinnamon, and then grilled until the outsides caramelize. Hello, summer!
Look it’s food!!!!! I have so missed writing recipes and taking photos and sharing them with you!
Before we jump into the peach and pound cake goodness, tell me all about your Memorial Day weekend. What did you do? Did it involve pretty water and cold beer and lots of hamburgers? I hope so.
We typically head to the beach or river when the weather warms up and Memorial Day weekend rolls around, but we are staying a bit closer to home these days as our new little guy settles in. And, while I missed reading by the ocean or sitting on the deck and looking out at the water, we really had the best weekend just the three of us here at home.
On Saturday we ventured out to Mint Hill Madness – a parade and festival our town holds each year. I had no expectations for how Merritt would do and was pleasantly surprised that he really did great! We stayed for about two hours and met up with some friends there. Merritt’s not riding any rides yet, but he LOVED the funnel cake and we had great barbecue from a local food truck.
Yesterday we took Merritt out to Bass Pro Shops (raise your hand if you are surprised it took this long) and he loved watching the fish in the huge aquarium they have out there. Garrett and I love going to zoos and aquariums and we can’t wait to be able to take him along with us. It was a fun little outing!
Mostly, though, we spent the weekend hanging around the house, playing outside, napping, and eating lots of delicious grilled food – including these amazing Grilled Peaches and Pound Cake Skewers.
I need you to do something for me. Go into your kitchen and see if you have the following ingredients: butter, honey, cinnamon, and salt. You do? Great, you are SO CLOSE to having delicious grilled dessert.
Next time you hit up Harris Teeter, look in the frozen aisle for an HT Traders pound cake. They sell them in loaves that are the exact perfect size and shape for cutting off a few slices for the grill whenever the craving hits. And it will hit often!
Finally, do you have peaches? It’s a little early yet, but if you have those staple pantry items and you’ve got that pound cake waiting patiently in your freezer then all you need to do is actually stop at the peach stand on the side of the road next time you pass it. You will be so happy you did!
The beauty of this dessert is it comes together so quickly. First we make a quick honey butter to slather all over the peaches and sliced pound cake. Butter, honey, cinnamon, and a pinch of salt to help us balance the flavors are all melted and stirred together.
Then we take our fresh peaches (really, is there anything better in the summertime?) and cut them in half. Then we’ll grab that pound cake straight from the freezer and cut off a thick slice. That’s cut in half and it’s time to make skewers!
I wrote this recipe so we could feed a crowd (because we are loving and giving and good neighbors), but it’s so easy to make just a few and that’s how we typically do it. Each skewer gets two pieces of the pound cake (one slice total) and half a peach. Then we use a pastry brush to cover the peaches and pound cake with honey butter before they go on the grill.
One important note: we have the best luck when the grill is a little lower, more medium heat than the full blast. Spray the grates and on go the skewers to cook for about 4 minutes on each side. They will get great grill marks and the honey will combine with the sugar in the pound cake and peaches to make a deliciously irresistible caramelized crust.
Please invite some folks over and serve them grilled peaches and pound cake. Bonus points if you serve them with a little vanilla ice cream or fresh basil (<– please do this and invite me over).
I hope you love this simple grilled dessert as much as we do! Tell me what you are grilling this summer? I want lots of ideas!
- 1 15oz frozen pound cake (I like HT Traders Cream Cheese Pound Cake)
- 4 peaches, halved
- ¼ cup butter
- ¼ cup honey
- ½ tsp cinnamon
- pinch salt
- ASSEMBLE THE SKEWERS: Slice the frozen pound cake (does not need to be thawed) into 8 even slices and then cut each of those slices in half.
- Halve each peach and remove the pits.
- On each skewer, thread one piece of pound cake, one half of a peach, and a second piece of pound cake. Repeat with all 8 skewers.
- In a small dish, combine honey and butter and melt together in the microwave until butter is completely melted, about one minute. Stir in the cinnamon and a pinch of salt.
- Brush the honey butter on both sides of the peach and pound cake skewers.
- GRILL THE SKEWERS: Heat grill to medium heat and spray the grates with a grill safe cooking spray.
- Place each skewer directly on the grates and cook about 8-10 minutes, flipping once halfway through. You should see grill marks on the peaches and pound cake and the peaches should begin to soften. Both will caramelize.
- Remove and serve. Enjoy!
