Avocado Dip. With just 2 ingredients.
Y’all, I’m almost embarrassed to share this because it’s hardly a recipe.
Basically we are just mashing avocado and stirring in salsa verde from a jar and allowing delicious avocado dip magic to happen! And, by “basically,” I mean that’s exactly what we are doing.
I made this a few weeks ago for a Mexican night family gathering at my house and I realized I am not being a good friend by keeping this so easy, only two ingredient, less than five minutes to make dip to myself.
This is the kind of recipe we all need in our back pockets for those times we want something to take to a get together and just barely have enough time to even get to the store, much less cook.

Also, let’s chat about tortilla chips. We eat a lot of salsa and guacamole and such things in our house and I have tried some chips over the course of my salsa-eating life. I’m here to tell you I’m declaring these from Snyder’s Lance the best. They aren’t too thin, not too crunchy or thick. They actually taste like corn, which I value in a tortilla chip. They are perfect for 2-ingredient avocado dip or grilled corn salsa.
Labor Day is just around the corner and football season is kicking off and anything with 2 ingredients is our friend for cookouts and tailgating.
We are usually heading east this time of the year to either the river or the beach, but we are switching things up this year. Garrett and I are getting away – just the two of us! – for a fun weekend in the mountains at Lake Lure. Last night I asked Garrett if we could try the Dirty Dancing lift in the water and I got a very blank look and realized that HE HAS NEVER SEEN IT. (Dirty Dancing was filmed at Lake Lure in NC, in case you didn’t really follow those last few sentences).
In addition to practicing my dancing moves, I plan to chat with my husband and read a lot and drink a lot of wine and eat some yummy food and unplug from all things email, phone, blog, and work-related. And, if you have Lake Lure area eating recommendations, send them my way.

- 4 avocados (ripe)
- 1 cup salsa verde
- Scoop avocado into a medium-size bowl and mash.
- Add salsa verde and stir until well-combined.
- Enjoy with tortilla chips and lots of Mexican food.
